Manual harvest with careful selection in two plots of vines between 30 and 50 years old at high altitude (between 850 and 900 m a.s.l.) in very deep clayey soils, which allows humidity to be maintained even in dry periods.
Each plot is vinified separately. In the winery, it the grapes are destemmed and vatted in stainless steel and concrete tanks where it undergoes alcoholic fermentation, during which we carry out short and gentle pumping overs.
Once the alcoholic fermentation is complete, the wine is transferred to 500-litre fine-grained, lightly toasted French oak barrels, where the malolactic fermentation and aging for 15 months take place.
El Valiente is a fruity wine but maintaining the essence of Bodegas Valdaya, with floral hints, such as violets, and balsamic notes. On the palate it is velvety, with round tannins and freshness. It maintains the classic elegant character in our wines and freshness, but opting for a more fruity and lively profile.
